Smoked cashew sour cream
Prep time: 10 minutes (excluding soaking cashews)
1 cup cashews (soaked for 1 hour - overnight)
1 1/2 tsp smoked paprika
1/2 tsp chilli (optional)
1/2 tsp sea salt
1 tbsp apple cider vinegar
Juice of 1 lemon
Pinch black pepper
2-5 tbsp cold water
Add your soaked cashews and the rest of the ingredients into your blender, along with 2 tbsp cold water. Then blend adding more water as you go on if needed.
Taste test to see if you want more salt or lemon/ACV for acidity or chilli for heat.
