Salsa Verde

Healthier Salsa Verde

This recipe is my healthier version of salsa verde. As salsa verde usually contains a lot of oil, here I used 1/2 an avocado instead which is a more whole food version.

This dip/dressing really packs a punch with flavour!! It is amazing as a snack with some corn chips, or drizzled on some veggies such as sweet potato, cauliflower or potato.

It is literally SO SIMPLE to make, and I find this dip quite different and bound to impress!!

INGREDIENTS

1/2 large avocado
2 cups coriander
1 jalapeño (seeds removed if too spicy)
3 spring onions (green parts)
1 poblano pepper**
Juice 1 lime
1/4 cup extra virgin olive oil
1/2 tsp sea salt

**If you can’t find poblano peppers, just use 1/2 a regular green capsicum.


DIRECTIONS

Using a high speed blender, place all ingredients and blend until smooth.

Keep in a sealed container for up to 5 days.
