Peanut Butter Protein Slice

Peanut Butter Protein Slice

Prep time; 15 - 20 minutes

Yields; 10-12 slices

INGREDIENTS;

Base-

2 1/2 cups oats

2 cups dates

1 cup peanut butter @byronbaypeanutbutter

1/4 cup protein powder (using @bareblends vanilla here - so delicious)

1/2 tsp sea salt

5 tbsp coconut oil

1/4 cup rice malt syrup (or Amoy liquid sweetener)

1/4 tsp vanilla paste

Chocolate-

1/2 cup melted cacao butter

1/2 cup cacao powder

4 tbsp coconut oil

4 tbsp rice malt syrup

1/2 tsp sea salt

1/4 tsp vanilla paste

DIRECTIONS;

Place the oats into a food processor and process until course flour. Add in the rest of the ingredients and process until it’s all incorporated and smooth.

Line a baking tray with baking paper.

Then spread out the base onto the tray onto an even layer, using a back of a spoon helps to get it as even and flat as possible.

Place into the freezer to set whilst you make the chocolate.

For the chocolate, add the cacao butter into a bowl over simmering water (make sure the water doesn’t touch the bowl.) once the butter had melted add in the rest of the ingredients and whisk until it’s all incorporated and silky.

Pour the chocolate on top of the base and then drop 1 tsp of peanut butter and swirl into the chocolate. Place in the fridge to set for about an hour.
