Hemp Pesto

SUPERFOOD PESTO

This pesto is the gift that keeps giving - and by this I mean, it tastes DELICIOUS, but is packed full of sooo much amazing vitamins, protein and nutrients that it will leave you feeling amazing also.

I love how versatile pesto is. I love to make a batch at the beginning of the week, then using it for pasta, a zuchiini noodle salad pictured above, on toast or just add it to some roast vegetables.

Now why is it so superfood??

It contains basil nuts which are high in selenium.
Hemp seeds - high in protein, omegas 3,6 + 9!!!
Kale - I mean I don’t have to explain why kale is so good - it’s green, rich in antioxidants, vitamin C, vitamin K, and beta-carotene.
Hemp seed oil - super anti-inflammatory!!

Now have I convinced you on this pesto yet!!??


Ingredients

For the Pesto;
1/4 cup hemp seeds
1/2 cup brazil nuts or walnuts
1/2 clove garlic
1 cup kale, approx
3 cup basil, approximately
Juice + zest 1 lemon
2 tbsp nutritional yeast
1 tsp sea salt
1/2 cup hemp gold oil / olive oil


DIRECTIONS

Place all the ingredients except the oil into a food processor or blender, add a couple tbsp of oil and pulse until combined, gradually add the remainder of the oil pulsing until you reach the consistency you want. Adjust seasoning to taste.

For the Zucchini Noodle salad;

Using a spiraliser for the zucchini to make spaghetti or using a potato peeler and peeling the zucchini into ribbons. Add to a bowl and toss with the pesto. Add in the cherry tomatoes, top with some sprouts and a squeeze of lemon juice and enjoy. - The perfect Summer salad!
*You can also add in some actual spaghetti to make this a heartier meal.

Or simply serve this pesto as a dip, or on toast!
